Tofu Scramble for hot weather

According to Traditional Chinese Medicine, sweating is healthy during the summer. When we sweat, we cool down but we also lose fluids. Taking care with diet helps us to both sweat and nourish the fluids and "yin" of our bodies. This tofu scramble recipe helps you sweat  with this turmeric-ginger-red pepper blend, and nourishes yin with wood ear mushrooms scrambled into the tofu.

  • 14 oz extra firm tofu, drained

  • 2 Tablespoons olive oil

  • 2 tablespoons nutritional yeast

  • 1 teaspoon Golden Vitality spice mixture, or 1 teaspoon of turmeric and a pinch of cayenne powder (this won’t be the same but can approximate)

  • 1/2 teaspoon salt

  • 1/2 red bell pepper sliced

  • 1/2 medium yellow onion diced

  • 3-5 black wood ear mushrooms sliced into ribbons after being reconstituted by pouring boiling water over them and soaking for 10 minutes

Directions:

Cook vegetables: Heat half the oil in a large cast iron skillet over medium heat and add the onions and peppers. Stir occasionally and cook until soft.

Cook tofu: Remove vegetables from the pan and add the remaining 1 tablespoon of olive oil. When the oil shimmers, add the tofu and mash to break it up. Cook 4-5 minutes until it releases some liquid.

Season: Add the nutritional yeast, Golden Vitality spices, and salt. Stir frequently for 2-3 minutes until the turmeric color is evenly distributed and then mix in the vegetables and mushrooms, heating throughly all together.
